Spelt Bread
Ingredients
1kg Spelt flour
25g fresh yeast
1tsp salt
600ml warm water(35-40°)
1tbs vegetable oil
15g sesame seeds
Method
1. Place the flour in a large mixing bowl.
2. Blend the yeast into half the water and roughly mix into the flour.
3. Dissolve the salt in the remaining warm water and add to the flour.
4. Add the oil and mix the dough thoroughly for four minutes using a wooden spoon then cover and leave to rise for 1 hour.
5. Knead dough again then oil two 1Ib loaf tin & divide dough between them.
6. Sprinkle with sesame seeds, cover and leave to rise for 20 - 30 minutes.
7. Cook in an oven pre-heated to 220°C/425°F/Gas Mark 7 for 30 - 35 minutes.
Spelt Pastry
Ingredients
200g spelt flour
100g soft margarine
to mix cold water
1. Using a pastry cutter or knife, cut the fat into little pieces in the flour.
2. When the pastry looks like large breadcrumbs, add water, a little at a time, until you have a soft dough.
3. Make the pastry into a ball of dough and chill for 30 minutes.
4. Roll out pastry on floured surface to prevent sticking.
5. Bake pastry according to your recipe.
Spelt Muffins
Ingredients
340g spelt flour
55ml or 4 tablespoons milk
60g sugar
3 eggs, beaten
1 Tablespoon baking powder
1 Tablespoon oil
1/2 teaspoon salt (would be much healthier to leave it out)
Mix all dry ingredients. Add milk, eggs and oil. Mix. Place mixture into pre-greased muffin tins. Bake in oven for about 17 minutes, or until browned, at 190 degrees C
Variations Add 110g chopped almonds, OR 180g dried fruit
Spelt Banana Bread
110g soft butter
175g brown sugar
2 eggs, beaten
300g spelt flour
1 teaspoon baking soda
1/2 or less teaspoon of salt (leave out to cut down on daily salt intake)
2 or 3 ripe bananas, mashed
55g chopped almonds (optional)
Pre-heat oven to 180 degrees C. Cream butter and sugar;
Add eggs and beat well. Add dry ingredients and finally bananas
and nuts. Mix well. Bake in 5x9" loaf tin, well-greased. Bake for one hour or until toothpick
comes out clean.
